This crunchy, mouthwatering, and refreshing salad is packed with veggies and is high on protein. It is filling, vegan, and so easy to put together. Chickpeas and veggies are tossed together with spice infused zesty lemon-olive oil dressing. Enjoy it as a chaat, appetizer salad, side dish or a flavorful healthy meal!!!

Ingredients
- 1.5 cup boiled chickpeas
- ½ cup bell pepper/capsicum, chopped
- ¼ cup cucumber, diced
- 1 medium carrot, diced
- ¼ cup onions, thinly sliced
- 8-10 grape tomatoes, halved
- ¼ cup lettuce
- ½ jalapeno, deseeded and finely chopped
- ¼ cup cilantro/coriander, finely chopped
For Dressing
- 1.5 tablespoon extra virgin olive oil
- 2 tablespoon lemon juice
- 2 teaspoon achari/pickle masala
- 1 teaspoon chaat masala
- ½ teaspoon freshly cracked black pepper
- 1 teaspoon black salt/kala namak or salt as per taste
Instructions
- Whisk together all the dressing ingredients - olive oil, lemon juice, achari masala, chaat masala, pepper, and salt.
- In a large bowl, combine boiled chickpeas, bell peppers, cucumber, carrots, onions, grape tomatoes, and jalapenos.
- Drizzle the dressing and toss to combine all the ingredients. Adjust salt and spice level as per your liking.
- Finally, add lettuce and garnish with cilantro and serve immediately.
