With the weather getting cooler around here, I crave for all things warm and cozy. This vegetarian chili is all that and more.
I try to use as natural ingredients as possible in my cooking, hence used dried beans instead of canned ones, but totally understand the need for some quick yet healthy fixes for those busy weeknights. So just switch to 1 can of each kind of bean and cook on manual (High) pressure for 10 min and release the pressure manually after 10 minutes.
This recipe is highly versatile as you can customize as per your liking or on the availability of the kind of beans you have. I have used kidney beans, black beans, and pinto beans. You can use all or any of these and more. Similarly, you can enjoy this chili with toppings of your choice.
The good thing about this recipe is not just it's healthy and yum, it's great for potlucks and parties and can be made well in advance in bulk and freezes well too!

Vegan Butternut Squash Chipotle Soup

Ingredients
- 2 tablespoon Olive or vegetable oil
- ½ cup black beans
- ½ cup kidney beans
- ½ cup pinto beans
- 2 teaspoons minced garlic
- 2 medium diced onions
- 1 cup tomato purée/crushed red tomatoes fresh or canned
- 1 green or red bell pepper/capsicum seeded and chopped
- 1 Jalapeño seeded and chopped
- 1 carrot peeled and diced
- ½ cup corn kernels
- 2 teaspoon chili powder or cayenne pepper
- 2 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon ground black pepper
- salt as per taste
- ¼ cup fresh cilantro/coriander
- Juice of 1 lemon
Topping suggestions
- Avocado slices
- Sour cream
- Mexican Blend cheese or Monterey Jack cheese
- Tomato salsa
- Tortilla chips
- Jalapeño slices
Instructions
- Soak all the beans in hot water for 4-5 hours.
- Turn Instant Pot on SAUTÉ mode and add oil to the inner pot.
- Once it's hot, add minced garlic. Stir for about 30 seconds.
- Add onions and sauté for 3-4 minutes or till it turns light golden. Stir in bell pepper, jalapeño, corn, and carrots for another couple of minutes.
- Add all the spices - salt, chili powder, smoked paprika, ground cumin, and black pepper. Mix well.
- Stir in the tomato purée for 2-3 minutes.
- Add all three kinds of soaked and drained beans followed by 4 cups of water.
- Cover and lock the lid in the sealing position.
- Select the PRESSURE COOK mode on High for 40 minutes.
- Let the pressure release naturally.
- Open the IP lid, let it sit for about 20 min for flavors to blend well.
- Garnish with cilantro and squeeze in the lemon juice.
- Load up with all your favorite toppings and enjoy!
Recipe Notes
- Is naturally vegan. Skip adding the cheese topping and sour cream.
- For a thicker consistency, simply smash some beans using the back of the ladle.
- If using canned beans, simply pressure-cook on high for 10 minutes in 2.5 cups of water and release the pressure manually after 10 minutes.
- Make a big batch as the leftovers taste even better the next day. It stays fresh in the refrigerator for 4-5 days in an airtight container. Freezes well in an airtight container for up to 3 months. To use, simply thaw in the fridge overnight and then heat it up in microwave or stovetop.
- Adjust the spiciness as per your liking.
