A super refreshing summer salad that's perfect as a barbecue or picnic dish that hits the spot every time. Watermelon is tossed along with mint and feta in a zesty lime vinaigrette. It's super easy to make and is big on flavors!!

Ingredients
- 5 cups watermelon, chilled and cubed
- ½ cup fresh mint leaves, roughly chopped
- ½ cup crumbled feta
- juice of 1 lime
- 3 tablespoon extra virgin olive oil
- 1 tablespoon lime zest
- ½ teaspoon rock salt or black salt
- ¼ teaspoon freshly cracked black pepper
- salt to taste
Instructions
- In a small bowl, whisk together olive oil, lime juice, zest, salt, rock salt, and pepper to make your vinaigrette.
- Place the cubed watermelon and mint in a large bowl.
- Drizzle the dressing over watermelon. Toss to combine.
- Finally, sprinkle feta on top. Adjust salt if need be. Serve immediately!!!
Recipe notes
- Always add feta in the end for better texture and a delicious experience.
- Go easy on the salt as feta is pretty salty too.
- Rock salt and lime zest provides that extra kick. So try not to skip it. If you don't have rock salt, use sea salt.
- It tastes best served fresh.
