    Watermelon Salad with Feta and Mint

    A super refreshing summer salad that's perfect as a barbecue or picnic dish that hits the spot every time. Watermelon is tossed along with mint and feta in a zesty lime vinaigrette. It's super easy to make and is big on flavors!!

    Watermelon salad with feta & mint

    Ingredients

    • 5 cups watermelon, chilled and cubed
    • ½ cup fresh mint leaves, roughly chopped
    • ½ cup crumbled feta
    • juice of 1 lime
    • 3 tablespoon extra virgin olive oil
    • 1 tablespoon lime zest
    • ½ teaspoon rock salt or black salt
    • ¼ teaspoon freshly cracked black pepper
    • salt to taste

    Instructions

    1. In a small bowl, whisk together olive oil, lime juice, zest, salt, rock salt, and pepper to make your vinaigrette.
    2. Place the cubed watermelon and mint in a large bowl.
    3. Drizzle the dressing over watermelon. Toss to combine.
    4. Finally, sprinkle feta on top. Adjust salt if need be. Serve immediately!!!

    Recipe notes

    • Always add feta in the end for better texture and a delicious experience.
    • Go easy on the salt as feta is pretty salty too.
    • Rock salt and lime zest provides that extra kick. So try not to skip it. If you don't have rock salt, use sea salt.
    • It tastes best served fresh.
