Ingredients
- 2 tablespoon olive oil
- 6 Roma tomatoes, quartered
- Onions, thickly sliced half cup
- 1 jalapeno, halved lengthwise and deseeded
- ¼ cup frozen corn
- 1 clove garlic, peeled
- ½ teaspoon cumin powder
- ¼ cup cilantro, trimmed
- 2 tablespoon lime juice
- ½ teaspoon black pepper, freshly cracked
- Salt, per taste
Instructions
- Preheat oven to 400F.
- In a prepared rectangular baking tray, spread tomatoes, garlic, jalapeno, and onion. Drizzle with olive oil.
- Place it in the oven once it's ready, about 10min. Flip the tomatoes and stir the rest of the ingredients once in between.
- Turn off the oven and change the setting to broil for 2-3min. Make sure the skin is somewhat charred to get that roasted flavor.
- Remove the tray from the oven and let it cool off for a few minutes.
- In a blender combine all the tray ingredients along with corn, salt, pepper, cumin powder, and lime juice. Pulse to a chunky consistency.
- Transfer to a serving bowl and garnish with cilantro. Enjoy with tortilla chips!!
