    Tahini

    This Mediterranean and Middle Eastern staple is quick and easy to make with minimal basic ingredients. It is a base for many recipes like hummus and baba ghanoush.

    Tahini

    Ingredients

    • 1 cup Sesame seeds (preferably hulled)
    • ¼ cup olive oil
    • A pinch of salt

    Instructions

    1. Toast the sesame seeds in a wide-bottomed pan on medium-low heat. Keep stirring so as not to burn them.
    2. Once it turns a shade darker and fragrant, take it off the flame. Spread it on a tray or a large plate to let it cool.
    3. Transfer sesame seeds to a food processor and grind it. Add olive oil and blend to a smooth paste of pouring consistency. Add more oil if need be to achieve desired consistency.
    4. Season with salt and pour it in an airtight jar. Store it in the refrigerator for up to a month.
