This Mediterranean and Middle Eastern staple is quick and easy to make with minimal basic ingredients. It is a base for many recipes like hummus and baba ghanoush.
Ingredients
- 1 cup Sesame seeds (preferably hulled)
- ¼ cup olive oil
- A pinch of salt
Instructions
- Toast the sesame seeds in a wide-bottomed pan on medium-low heat. Keep stirring so as not to burn them.
- Once it turns a shade darker and fragrant, take it off the flame. Spread it on a tray or a large plate to let it cool.
- Transfer sesame seeds to a food processor and grind it. Add olive oil and blend to a smooth paste of pouring consistency. Add more oil if need be to achieve desired consistency.
- Season with salt and pour it in an airtight jar. Store it in the refrigerator for up to a month.
